Better VRMs provide clean power to the CPU, are less likely to overheat and have a longer lifespan. There is a point of diminishing returns, the high end boards usually are only worth it for extreme oc.

One reason might be that it's not possible to put big heatsinks in ITX boards, they have to use strong VRMs to prevent overheating. ITX cases typically have worse airflow than ATX cases.
